Organic Foods in Venetian Baking Traditions: Learn Easy Organic Cookie Recipes
The Veneto region, comprising the islands of Venice, and a
vast, dry land territory covering Padova, Verona, and
Vicenza was largely an agricultural area dedicated to
farming of corn, soft wheat, and fruits and vegetables
during the pre-industrial age. Money was scarce, and
families survived largely on the fruits of their labor,
fish from the Venetian lagoon, and a diet creatively
designed around those organic grains, like corn, that were
in abundance. Meats were considered a luxury. In fact,
cured meats and salamis were a solution to the lack of
refrigeration and provided a hearty alternative to the
otherwise "poor" diet.

Thus, the organic baking traditions reflected not only the
antique traditions, but also the organic ingredients most
readily available. Converting corn into polenta for the
dinner table or a sweet cookie for the desert table
represented the marriage of necessity to nutrition. In
fact, most of the traditional Venetian organic cookies are
dry, rather than moist, given the scarcity of organic
ingredients, the difficulty in conserving them, and the
palette preferences of the Venetians for a drier organic
cookie. Many of the desert and organic cookie recipes were
secret, passed down through the maternal side, and often
nicknamed "biscotti della nonna" or "grandmother's cookies"
to represent their homemade origins. The organic cookies
were jealously conserved in lovely tin or wood boxes, next
to the crystal bottles of rose oil, walnut liqueur, or
citron liqueur.

Corn and wheat were organic grains that, at the time,
produced according to what we consider today as organic
farming. Today, these same recipes are replicated as
organic cookies, a healthy alternative to conventional
practices, which respect the environment and do not employ
the use of pesticides. These sweet organic treats have
been made for centuries, although never too sweet, as it
was the homemaker's intention to let the organic
ingredients speak for themselves, whereas sugar was an
expensive indulgence.

This traditional, organic cookie recipe is easy to prepare:
Zaeti

Zaeti in Venetian Dialect translates to "gialetti" in
Italian, or "small yellow cookies", a nickname given for
the fact that they are made of yellow corn flour, an
element common to every family kitchen in the region, and
therefore a sign of their rusticity. To make them more
"genteel", tradition called for the addition of wheat
flour, sugar and raisins.

Organic Food Ingredients: 7/8 cup of flour, 1 1/3 cup of
finely ground corn flour, an abundant half cup of sugar, an
abundant half cup of unsalted butter,2 eggs, ¼ cup
of raisins, one half ounce of yeast, 1 grated lemon,
½ of a small glass of grappa, a dash of salt, 2
tablespoons of flour for the workspace, 4 tablespoons of
lightly sifted confectioner's sugar.

Place the raisins in tepid water for 10 minutes to soften
them. Drain the water and gently wring them with your
hands to remove the excess water. Put them in a bowl and
add the grappa to "bathe" them for approx 20 minutes. Then
drain the grappa and dry them with a very clean kitchen
towel.

Sift the wheat and corn flour together with the yeast and
salt and place in a bowl. Add the beaten eggs, and the
melted butter. Mix with a fork and add the raisins.
(Before adding the raisins, to make sure they don't fall to
the bottom of the mixture, follow this procedure: lightly
dust them with 2 tablespoons of flour). Add the sugar and
the grated lemon peel.

Mix until the dough becomes homogenous. Lay the dough out
on a lightly floured workspace, and roll it out to a
thickness of just less than ½ an inch. Using the
rolling pin to help you, and using a knife, cut out long
ovals about 2 inches in length.

Place them on a baking sheet, not too close together, and
bake in a 350 ° oven for 20 minutes. Once cooled, dust
them with the confectioner's sugar and serve together with
your favorite liqueur.

Enjoy these organic, Venetian sweets and please your family
and friends with them by bringing antique traditions to
your table, just as the Venetians have done for centuries.

While one of the greatest facts on honey storage is that it
doesn't spoil even with no preservatives and additives,
liquid honey is susceptible to physical and chemical
changes during storage; it tends to darken and lose some of
its aroma and flavor. Over time, liquid honey also tends to
naturally crystallise and become lumpy. Crystallisation is
easily reversible and does not affect the taste and quality
of the honey at all, although it changes its appearance.
Hence, for commercial reasons, a certain shelf life is
often stated on the honey bottles in the shop.

I often read from honey storage tips that honey can be kept
at room temperature and should not be stored in too cold
nor too hot place. The problem here is it can be confusing
because room temperature varies from country to country!
For instance, where I live, room temperature sometimes
could be as high as 35°C but I do not refrigerate any
of my honey as cold temperatures would speed up the process
of granulation. Also, the rate of crystallisation varies
for the different types of honey. Tupelo honey and Acacia
honey, for instance, tend to stay liquid and is able to
resist crystallization better than other types of honey,
whereas Lavender honey rushes to crystallise. Honey that
has been heated to 130 or 140 degrees will remain liquid
for a few months.

I would advise honey to be stored at a temperature of
21°C to 27°C or 70°F to 80°F in a dry
cupboard, make sure that the cap is on tight since honey
tends to absorb moisture from the environment, which can
lower its quality. Also store honey away from direct
sunlight as it could affect its properties. And this is the
reason why some honey come in dark containers. However,
these dark containers do not allow consumers to judge the
color, viscosity, clarity, and crytallisation of the honey.
Also, glass packaging is preferred by some people because
glass is neutral and doesn't react to honey and alter its
quality. It's easy to restore granulated honey to its
natural state, for instance you could put grainy honey on
hot toast, the granules will melt as you eat. You can also
place a granulated jar over hot water (about 50-60°C),
as soon as the granules are dissolved, remove the honey
from the heat and let it cool as quickly as possible.
Remember, never boil honey!

What is Freeze Dried Coffee?
Most people given a choice would prefer the taste of fresh
ground coffee rather than instant freeze dried coffee but
nonetheless the freeze dried coffee market is vast both
domestically and commercially.

It's sheer convenience and ease of use is probably its main
advantage and with the improvements of modern production
processes the flavour of the final beverage has improved
dramatically. Just add a spoonful of freeze dried coffee
granules to a mug, add hot water and you can enjoy a decent
cup of coffee.

We have all probably drunk freeze dried coffee at some
stage, but what actually is it and how is it made?

Initially fresh brew coffee is made in the usual way using
a very large industrial bulk brewer in which very hot water
is passed though fresh coffee grounds in a filter system to
produce the hot coffee liquor we are all familiar with.

This coffee liquor is then concentrated through a series of
evaporators under vacuum where some of the aroma and
flavour compounds are also removed and stored. This ensures
that some of the flavour and aroma of the coffee that is
lost during the freeze drying process can be 'put-back'
into the final product just before packing.

The concentrated coffee liquor then moves on to the actual
freeze-dry processing equipment. Here the coffee liquor is
initially foamed and then frozen to a temperature of -450
degrees centigrade. It is then ground to the required
particle size.

The ice crystals that formed in the freezing process from
the water content in the beverage are then removed in a
process called sublimation. Here the frozen granules are
subjected to a high vacuum which results in much of the
water ice content to be transformed directly into gas
(without a liquid stage it would normally undergo) before
being returned to room temperature.

The resulting freeze dried coffee typically contains just 3
to 5 percent water. The more volatile flavour and aroma
compounds extracted at the initial brewing stage are then
returned to the dried product just before packing.

As you can imagine an industrial factory producing freeze
dried coffee produces vast amounts of used coffee grounds
in the production process, but these are not put to waste.
They are usually sold on as animal feed, compost or organic
fuel.

It should be noted that freeze dried coffee is different
from spray dried coffee and is generally accepted as
superior in quality. The spray dried production of coffee
will be the subject of another article.

As a lot of families know it's hard to please everyone all
the time. I have a pretty big family and I know this well.
Finding movies, shopping, who sets where, and especially
what sounds good for dinner. Sometimes where and what to
eat, can cause huge debate.

Have you ever ordered light when eating out because your
money is tight, just to get your bill for more then you
think and then the tip? This use to happened to me. Now we
don't go out to eat very much at all and find it's a lot of
fun for the family to recreate our favorite foods, whether
it be a KFC Chicken recipe or our favorite Applebee's meal.

When I first heard about this program from a friend, I
decided to go online and get my own copy. When I went
online I found quiet a few programs offering some of the
same dishes and some different ones. This prompted me to do
a product guide review of some programs offered today. I
selected some of the top choices available for my review,
and gave my preference but made these items available for
you to review as well.

One thing my family thinks is kind of funny is when my son
or I build something or work on something we never look at
directions, because we want to figure it out for ourselves
or it takes to long. When my son or I cook we measure
everything out to the exact directions, because as my son
said we got to put it in our mouth. My kids still laugh
because I cooked a frozen pizza with the cardboard still
under it. I know my kids and wife don't see me as a great
cook but when I follow some of these recipes my kids ask
for dads pizza sauce or dads KFC Chicken recipe. Understand
my son and I live in a house full of 5 girls, 4 daughters
and my wife. They all can cook better then me, that's
probably including the 7 year old too.

You may not see yourself as a great cook. You may not even
see yourself cooking for your friends or family. However
these recipes are kind of addictive and you will find your
self showing off, even calling it your recipe. You are
probably already a better cook then me and if not you
probably eat out quit a bit.

Something I have grown to love and that is making my own
fudge and candy. I never used to be very good at fudge
making but now I have found some recipes that I like and I
have to stop myself from pulling out the pots every night -
well nearly every night!

I love nestling down at night and being able to watch a bit
of TV and nibble on some of my favorite flavors. To be
honest the TV doesn't excite me too much but if I means an
excuse to satisfy the sweet tooth so be it. The other TV
watchers in the family don't seem to mind because they also
get the benefit from my having a sweet tooth.

If I am feeling guilty I make honeycomb because by
comparison it has so little sugar. But if I am feeling
only a little bit guilty I stick with the fudge.

Peanut brittle is a constant favorite and the beauty of
this candy is that you can change the type of nuts you use
and hence change the flavors if you are making it on a
regular basis.

If you have to take a little something to a party or a
gathering of some sort there is absolutely nothing like a
platter of homemade chocolates, candies and fudges. They
are everybody's favourites.

Homemade candy and fudge is also the most fantastic gift
for Christmas, but throughout the year it is a really
touching gift to give to older folk, because often they
can't get out to shop or their money is so limited that
they don't allow themselves these sorts of treats.

Another benefit of perfecting candy and fudge is that you
don't have to keep many items in the cupboard. I find with
cookie making you always seem to have to keep so many
different ingredients that I tend to fall back into making
the same old ones all the time so that I know I have the
ingredients available.

AND, WHAT A GREAT FAMILY PROJECT If you have a gathering
coming up that would be suitable to take a lolly platter
to, then making all the goodies the week before would be a
project to involve the kids in and have a treat at the same
time. By choosing the right items you can make them well
in advance of the big day. OF COURSE, you may have to hide
them but I am sure you would find a spot that only you
would know!!

Often when we are entertaining we get a bit hung up about
the fact that we should provide a dessert but if you have a
nice selection of candies and fudges on hand then you wont
need to bother with fussing about with a dessert and your
guests will love it just the same. They are just the
answer to have with a coffee. Obviously if you have a
selection of these available you can offer different taste
sensations and this often pleases guests because not
everybody likes the same types of dessert.

School holidays often bring certain dramas and if you are
prepared with items in the cupboard you can always divert
attention to making candies and fudges which I am sure will
'sweeten' the atmosphere!

So, get out those pots and pans and start sharpening up
your cooking skills.

For me, the smells of baking were part of my childhood,
part of the fabric of how I define my childhood and part of
the fabric of how I define my life to this day. The smell
of a favorite baked treat can still bring a smile of
remembrance to my face. What kitchen smells define your
childhood memories? What smells do you want your children
to define as their childhood memories? Here a couple of
great variations on that old favorite, chocolate chip
cookies. I hope you use these baking recipes to make
wonderful memories with your children.

Peanut Butter Chocolate Chip Cookies
1 1/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
3/4 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup creamy peanut butter
1 egg
1 teaspoon vanilla extract
2 cups semi-sweet chocolate chips
1/2 cup peanuts, coarsely chopped

In a small bowl, combine the flour, baking soda, salt and
cinnamon. In a large bowl, combine the butter, sugar, brown
sugar, and peanut butter. Mix together until creamy. Add in
the egg and vanilla extract. Add the flour mixture. Add in
the chocolate chips and peanuts. Drop the dough by
teaspoons onto baking sheets. Bake in a 375 degree oven for
7 to 10 minutes or until the edges of the cookies are set
but the centers are soft. After removing the cookies from
the oven, leave them on the baking sheets for 4 minutes
before removing them.

Oatmeal Chocolate Chip Cookies
1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups light brown sugar, packed
1 cup butter, softened
1/2 cup sugar
2 eggs
2 tablespoons milk
2 teaspoons vanilla extract
2 1/2 cups quick-cooking or old-fashioned oats
2 cups semi-sweet chocolate chips
1 cup chopped nuts (optional)

In a small bowl, combine the flour, baking soda and salt.
In a large bowl, mix together the brown sugar, butter and
regular sugar. Add in the eggs, milk and vanilla extract.
Slowly add the flour mixture. Add the oats, chocolate chips
and nuts. Drop by tablespoons onto baking sheets. Bake in a
375 degree oven for 9 to 10 minutes for soft cookies and 12
to 13 for crispy ones.

I Love French Wine and Food - A Saumur (Loire Valley) White
If you are looking for fine French wine and food, consider
the Loire Valley region of central France. You may find a
bargain, and I hope that you'll have fun on this
fact-filled wine education tour in which we review a white
Chenin Blanc from Anjou-Saumur Touraine in the central part
of the region.

Among France's eleven wine-growing regions the Loire Valley
ranks number three when it comes to the acreage devoted to
vineyards. The Loire is France's longest river running for
620 miles (one thousand kilometers) across the center of
the country. In many ways the Loire Valley can be
considered as a series of regions. Here they are running
from west to east: Nantais whose primary grape is the white
Muscadet, Anjou-Saumur whose primary grapes are the white
Chenin Blanc and the red Cabernet Franc, Touraine whose
primary white grapes are Chenin Blanc and Sauvignon Blanc
and whose primary red grape is Cabernet Franc, and Central
Vineyards whose primary white grape is Sauvignon Blanc and
whose primary red grape is Pinot Noir. We will review at
least one wine from each of these four areas.

Saumur is a city of about thirty-five thousand inhabitants
where the Loire and the Thouet Rivers meet in the Anjou and
Saumur zone of the Loire Valley, east of the Nantes and
west of Tours. It is a bourgeois city proud of its historic
center and Fourteenth Century Church of St-Pierre and the
city square of the same name. And of course there is a
Loire Valley turreted Castle, the Château de Saumur
well worth the visit even though the Musee des Arts
Decoratifs (Decorative Arts Museum) and the Musee du Cheval
(Equestrian Museum) may be closed to the public.

Saumur's Riding School, the Cadre Noir de Saumur (literally
the Black Cadre) was founded well over one hundred fifty
years ago. Its instructors, whether military or civilian,
wear beautiful black and gold uniforms in public
performances that attract up to forty thousand spectators.
If you are at all interested in equestrian performances
make sure to catch their class act. And stop by the Maison
du Vin (House of Wine) for more information on this great
wine-growing region.

Before reviewing the Loire wine and imported cheeses that
we were lucky enough to purchase at a local wine store and
a local Italian food store, here are a few suggestions of
what to eat with indigenous wines when touring this
beautiful region. Start with Rillions (Big chunks of Pork
cooked in Pork Fat). For your second course savor Becasse
fouree au Foie Gras (Woodcock stuffed with Foie Gras). And

Let's start by quoting the marketing materials. We see very
little white Saumur in our market, so this is a rare treat
indeed. Made with 100% Chenin Blanc, it shows the aromatic
virtues of the grape coupled with racy acidity. The result
is a wine that may be enjoyed in its youth with seafood
dishes such as grilled prawns, but will definitely age
gracefully for 3-5 years.

My first meal was fried chicken-breast scaloppini, with
rice and Turkish salad. This wine was very refreshing and
pleasantly acidic. It was palate-cleansing with a lot of
lime. It was quite present when pairing with a strong
Turkish salad.

The next meal consisted of slow-cooked chicken legs with a
mix of Eastern spices, brown rice, and green beans. The
Saumur Blanc was quite forward with plenty of fruit and
acidity. It was very pleasant.

The final pairing involved whole-wheat spaghetti and
hamburgers but no tomato sauce. The wine was refreshingly
acidic with a lot of lime. It was very long. While the wine
was somewhat flattened by a fruit-juice candy, it displayed
delicate fruit and acidity when paired with a good-quality
cheesecake.

The first cheese pairing was with a mild Italian Pecorino
Friulano cheese. This was no success; the wine became a bit
thin and lost a lot of its fruit. Then I tried a nutty
Dutch Edam cheese. The wine was moderately fruity and I
would say that combination was OK but not great.

Final verdict. I liked this wine and would buy it again. I
feel that it was quite good for the price. And there's not
all that much more to say about it.

So let's show our mothers how much we appreciate them by
returning the favor. Chocolate roses are romantic, sweet,
and gorgeous. Dads and kids, put on your aprons!

Chocolate Clay Ingredients
10 ounces semisweet chocolate (coarsely chopped chunks or
chips)
1/3 cup light corn syrup

Melt the chocolate in a small bowl over hot water, stirring
occasionally. The correct method for doing this is to boil
the water, take it off the heat, then put the bowl with the
chocolate on top. If necessary, return the pot of water to
the burner on low heat.

Add the corn syrup to the chocolate and mix well, scraping
the sides of the bowl with a rubber spatula and folding in
the syrup until no shiny syrup is visible and the mixture
forms a thick ball. Pour mixture onto waxed paper and
spread with the spatula until it's about 1/2 inch thick.
Let it sit and stiffen, uncovered, for about 2 hours at
room temperature. Now it's ready for making your roses.

Chocolate Roses Instructions

Knead a handful of chocolate clay at a time on a counter or
cutting board until it is soft and pliable like regular
clay.

Roll the chocolate dough into twelve 1/2-inch diameter
balls (for each full-size rose) and put them on waxed paper
about 1 inch apart. Press each ball with your fingertips
until it is a flat disk about the size of a quarter. Make
the top thinner than the bottom.

To make the center of the rose, roll one disk into what
looks like a tepee, rolling the thinner edge tightly into
the top of the tepee. Wrap the next disk around the opening
of the tepee and the third disk at the back of the tepee -
this is the rose bud. Now continue adding one disk at a
time as individual petals, gently curling the top edge
slightly downward. You can leave some roses as rosebuds,
then make various sizes, making them larger by adding more
petals. If there is excess chocolate at the bottom of your
roses, pinch it off with your fingers to make more balls.

Harden your finished roses at room temperature, which can
take up to a couple days, and then store them in a cool,
dry place. To retain the best chocolate flavor, it is best
not to store them in the refrigerator.

You can get fancy for Mothers Day if you like by using
white chocolate and experimenting with adding food
coloring. Or, decorate your chocolate roses by painting
them with melted white chocolate.

Tulips are fun too, and are really pretty made with white
chocolate and then painted.

To make larger roses, start with larger chocolate balls.

How to Make the Perfect Cup of Coffee
Whichever blend of coffee you prefer or whatever type of
equipment you are using to prepare the coffee the objective
is the same. To release the coffee oils and soluble coffee
compounds into solution in the final beverage.

Not all the soluble compounds are desirable particularly
tannin so it is important to brew the coffee is just the
right manner to produce the perfect cup.

Although it is possible to extract as much as a third of
the mass of coffee from the grounds the optimum amount is
about 20%

There are six important factors to consider when making
fresh coffee.

1/ The coffee grind - By this we mean the particle size of
the coffee grounds. This varies typically from largest to
smallest thus: coarse, medium, fine and espresso (or very
fine)

Over-extraction can occur if the grind size is too small
for the method and equipment used resulting in a coffee
being bitter and too strong. If the size is too large then
under-extraction will occur resulting in a weak wishy-washy
coffee.

Typically one would use a coarse grind for a coffee pot,
medium grind for a cafetiere (French Press), medium to fine
for a typical filter drip machine and espresso grind for an
espresso machine.

2/ Freshness and quantity of coffee - Coffee beans should
be stored in a cool dry place out of direct sunlight and
ideally kept in an airtight container. The coffee should be
ground to order as ground coffee will lose some of its
subtle flavours and aromas if is left exposed to the
atmosphere for very long.

It is vital to use the recommended dosage of coffee
depending on the equipment being used. Using less coffee
but increasing the brewing time will not result in a
standard brew but create an over-extracted drink. Using
more coffee than recommended but a quicker infusion time
will result in an under-extracted coffee.

3/ Temperature and water quality of the water - Always use
fresh cold water to start off the brewing process. Ideally
the water should be filtered to remove unwanted taints and
odours and be very slightly hard.

Water should be used that has just come off the boil and be
approximately 95-98 degrees Celsius for optimum extraction
of coffee. Too hot can scald the coffee and too cool will
result in under-extraction.

4/ The infusion time - The length of time that the hot
water is in direct contact with the coffee grounds is
crucial in producing the perfect cup. In reality this is
determined by the equipment being used to brew it, so
always follow the manufacturers guidelines.

As a rough guide however consider the following.

10-30 seconds for espresso grind 3-6 minutes for fine grind
6-8 minutes for medium grind 8-10 minutes for coarse grind

5/ Brewing method employed - Basically there are three
different methods employed to make coffee. These are steep
& strain, filter infusion and pressure infusion.

Steep and strain simply involves putting hot water in
contact with coffee grounds in a pot or container until
under extraction has occurred. The resulting brew is
strained to isolate the coffee liquor.

Filter infusion is common in many applications and uses a
filter basket filled with coffee grounds that has hot water
added from above. The infusion time is relatively short as
the water infuses briefly with the coffee until the liquor
passes thought the basket into a flask or container below.

Pressure infusion - Hot water is forced under high pressure
though a small tablet of compacted grounds to produce an
individual serving of coffee. This is the standard method
of producing espresso.

Again it is imperative to use the right method with the
correct type and grind of coffee.

6/ Cleanliness - Coffee contains oils that will leave a
tarry residue on equipment that can contaminate and spoil
the taste of subsequent brews. Daily washing and cleaning
of equipment is an absolutely vital part in producing the
perfect cup.

Wine lovers are now taking their game to the next level by
starting wine clubs - A place where true wine lovers unite
and all they do is drink and discuss.

Even doctors recommend drinking a glass of wine a day
because it is actually good for your health. It cuts down
on your risks of getting a heart attack. Plus the great
thing about wine is it comes in all prices. I can't tell
you how many times I've bought wine just because I didn't
have enough money for a 6 pack of beer.

With the popularity of wine on the increase, it won't be
hard to begin your own wine club. The main idea is to find
other people who are also same love for wine like you and
set a time and day that you can get all together on a
regular basis - usually once a month.

So now that you want to start your own wine club, the first
thing is to find someone who truly likes being somewhat of
the 'leader'. This person should be someone who is more
organized than others, somewhat of a event coordinator kind
of person.

Usually when people start groups, they want to grow right
off the bat. I suggest you start off with a handful of
people. If you can do it well with a small group of people,
you'll learn how to manager a much larger group.

You are probably wondering well how will I get to try out
new wines every month. The information can be found
everywhere, including on the internet, wine magazines and
don't forget your local wine or wine making shop.

So after the wine, get some wine glasses for your club
members. They are cheap and as a leader, they will truly
make you stand out. After all, when you start something
good, start it right!

So it's your first meeting, what should you talk about?
Just the basics would be a perfect topic to get the ball
rolling. Everyone loves to learn about the things from the
bottom because they understand it more and it helps
everyone out. So talking about grapes and yeast and stuff
like that would be a great starter.

To make the meetings more interactive, try to get
everyone's opinion on the same wine. A lot of wine clubs
have wine rating cards, where each member rates the wine in
their own way and than you compare all the ratings
together. I guess you can call it playing wine games.

It's a natural process for human beings to gather in groups
and discuss subjects of interest. There is so much to learn
about wines that your club will never be at a loss about

Most Requested Hot Appetizers, Delicious Desserts and Classic Cocktails
I am not a "throw-a-can-of-peanuts-on-the-table" kind of
gal! When I am planning a party, it is important to me that
I choose thoughtful, satisfying recipes that:

Are simple to make
Have few ingredients
Hold up well over time
Are pleasing to look at and of course,
Taste great!

Over the years, I have tried out a lot of recipes on my
friends and family and no doubt about it, the "Most
Requested Hot Appetizers, Delicious Desserts and Summer
Drinks" are those listed below (in no particular order).

Top 2 Hot Appetizers

Number One Most Requested Hot Appetizer--Warm Chipotle
Cheddar Dip

2 cups shredded Cheddar cheese
1 cup shredded Monterey Jack or Mozzarella cheese
1/2 cup mayonnaise
1-8 oz. can whole kernel corn, drained (3/4 cup)
1-4 oz. can chopped green chili peppers, drained
2 teaspoons finely chopped canned chipotle chili peppers in
adobo sauce (or to taste)
1/4 teaspoon garlic powder
1 medium tomato, seeded and chopped (3/4 cup)
1/4 cup sliced green onion
2 tablespoons snipped fresh cilantro
Vegetables, crackers or chips

I found this dip when I was on a low carb diet and was
looking for a party appetizer that would work well with
vegetables. Something with a robust flavor that would perk
up the veggies. Well this one definitely fit the bill.

This appetizer has become a favorite among my friends. It's
served multiple times throughout the year at various
parties that I either host or attend.

You can make it as smokey and spicy as you want by
adjusting the amount of chipotle peppers (smoked jalepenos)
but watch out. You can easily go from mildly spicy to
blow-your-face-off hot by adding too much!

Steps to Make Cheddar Chipotle Dip

Preheat oven to 350 degrees.

Stir together cheeses, mayonnaise, corn, green chili
peppers, chipotle chili peppers and garlic powder in a
large mixing bowl. Spread mixture into a 1 quart, covered
dish. Bake for 30 minutes until bubbly.

Top with tomato, green onion and cilantro. I like to make a
pattern out of the toppings so I put the tomatoes all in
the middle, make a ring around them with the green onion
then sprinkle the cilantro over all.

Serve with vegetables, like red, green and yellow peppers.
Tostido and Frito Scoops work well too.

Number Two Most Requested Hot Appetizer--Warm Green Chili
Dip

8 oz. shredded mozzarella cheese
8 oz. shredded mild cheddar cheese
2 cups mayonnaise
1 small sweet onion, minced
1 can (4 oz.) chopped green chilis, drained
1-1/2 oz. chopped pepperoni
1/2 cup sliced ripe olives
Tostidos or Fritos Scoops

In a shallow baking dish, combine the first five
ingredients. Top mixture with the pepperoni and olives.
Bake at 325 degrees about 25 minutes or until bubbly.

Serve with Scoops, crackers or assorted fresh vegetables.

Note: I do not recommend using reduced fat mayonnaise.

Speaking from personal experience, both of these hot
appetizers are guaranteed to be a hit at any get together.

WARNING: Get ready to hand out the recipes!

Top 2 Delicious Desserts

Number One Most Requested Delicious Dessert--Raspberry
White Chocolate Dream Bars

1 box white cake mix
1/3 cup evaporated milk
1-1/2 sticks melted butter
1 cup chopped nuts
1/2 cup seedless raspberry jam
12 oz. white chocolate chips

Combine cake mix, milk, butter and nuts. Makes a very gooey
dough. Spray a 9 x 13 pan and spread half of the dough into
the bottom of the pan. Bake for 10 minutes at 350 degrees.

Melt the jam in the microwave (about a minute) and spread
on top of hot crust. Immediately sprinkle chocolate chips
over jam. Crumble remaining dough on top and bake an
additional 20-25 minutes.

Cool completely before cutting. For bigger parties, this
recipe easily doubles and can be made in a 15 x 10 pan.

Once you get the hang of this technique, you can think of
all sorts of combinations. How about using chocolate cake
with mint chips? Or lemon cake with white chocolate?

Number Two Most Requested Delicious Dessert--Chocolate
Amaretto Bundt Cake

1 pkg. chocolate devil's food cake mix
1 small pkg. instant chocolate pudding mix
4 eggs
1 cup milk
1-1/2 oz. Amaretto liqueur
1/2 cup vegetable or canola oil
1 cup semi sweet chocolate chips
1 cup fresh raspberries (optional)
1/2 cup seedless raspberry jam (optional)
Whipped cream (optional)

Glaze

1 stick butter
3/4 cup sugar
1/2 cup Amaretto

Preheat oven to 325 degrees.

Combine first 6 ingredients and blend well. Stir in chips.
Grease and flour a bundt pan. Pour batter into the prepared
pan. Bake for 1 hour or until toothpick comes out clean.

Melt glaze ingredients in a saucepan or microwave. Pour 2/3
of glaze over top of cake while cake is hot from oven and
still in pan. Allow cake to remain in pan for 25 minutes.
Remove cake from pan and drizzle with remaining glaze.

When I make this cake dessert, I fill the middle with fresh
raspberries and present it on my grandmother's crystal
pedestal cake stand which is very dramatic.

Just before serving, I make a raspberry sauce by melting
the jam in the microwave. Each lucky guest gets a plate
with some of the sauce, a slice of cake, a few berries and
some whipped cream. Yum!

Top 2 Summer Drinks

When most people host parties, they usually have the basic
alcoholic beverages, like beer and wine, but rarely do you
see a host offer a selection of really special summer
drinks. I have perfected my list of offerings over the
years and now I share my Top 2 with you.

Number One Most Requested Summer Cocktail--Limoncello Mint
Lemonade

1/2 cup lemonade concentrate
1/4 cup fresh mint leaves
1 tbsp. fresh lemon juice
Ice cubes
1/4 cup Limoncello (lemon liqueur)
1/2 cup club soda
Lemon and Mint for garnish

In a small pitcher, "muddle" mint leaves together with
lemonade concentrate and lemon juice. Muddle means to
bruise the leaves so they release their flavor. I use the
end of a wooden spoon.

Stir in ice cubes, Limoncello and club soda and pour into 4
glasses. Top them off with a lemon slice, a sprig of fresh
mint and an umbrella.

Makes 4-10 oz. drinks.

Number Two Most Requested Summer Cocktail--Fruited Brandy
Punch

This one has become a favorite at my home and a lot of the
parties I attend, most likely because everyone loves it and
you can make a huge amount and serve it in a punch bowl.

1/2 part brandy (I use Christian Brothers brand)
1 part lemon-lime soda
2 parts fruit juice (Cranberry-Peach blend is my favorite)
1/2 bag frozen fruit (Blueberries and strawberries look
great)
1 fruited ice ring (see recipe below)
Slices of lemons, limes and oranges, if desired

Mix fruit juice and frozen fruit together in a nice punch
bowl or container. Pour in lemon-lime soda, gently stir and
then float an ice ring on top (see recipe below).

Rather than spike the punch, I serve the brandy on the side
so my guests who prefer non-alcoholic punch can drink it
too.

To make ice ring

Pour 1-2 cups of the juice mixture from above into a Bundt
pan or another mold. Add some of the fruit and/or fresh
citrus slices. Freeze overnight.

Just before serving, set the pan into some hot water to
loosen the ice ring and then turn it into the punch bowl.
It makes a really beautiful presentation, cools the punch
and since it's made with juice, it will not water down the
punch. Perfect!

This recipe can easily be altered so you can serve it from
a Drink Fountain which is really gaining popularity lately.
Just leave out the fruit and the ice ring.

If you went to a summer party and somebody handed you any
of these summer drinks, wouldn't you think that the hosts
went out of their way to make things special? That they
really took time to get it right? Everybody loves a special
summer drink on a warm sunny day.

Delicious Desserts" (in no particular order). Enjoy!

Number One Most Requested Delicious Dessert--Raspberry
White Chocolate Dream Bars

1 box white cake mix
1/3 cup evaporated milk

Bake for 1 hour or until toothpick comes out clean.

Melt glaze ingredients in a saucepan or microwave. Pour 2/3
of glaze over top of cake while cake is hot from oven and
still in pan. Allow cake to remain in pan for 25 minutes.
Remove cake from pan and drizzle with remaining glaze.

When I make this cake dessert, I fill the middle with fresh
raspberries and present it on my grandmother's crystal
pedestal cake stand which is very dramatic.

Just before serving, I make a raspberry sauce by melting
the jam in the microwave.

Each lucky guest gets a plate with some of the sauce, a
slice of cake, a few berries and some whipped cream. Yum!

Number Three Most Requested Delicious Dessert--Mystic Mint
Cookies

These are melt-in-your-mouth heaven!

Dough
1 cup sugar
1 stick (1/2 cup) butter, softened
1 teaspoon vanilla
1 egg
2 squares (1 oz. each) unsweetened chocolate, melted and
cooled
1 cup all purpose flour
1/2 teaspoon salt
Heat oven to 375 degrees.

Mix sugar, butter, vanilla, egg and unsweetened chocolate.
Stir in flour and salt.

Drop dough by rounded teaspoonfuls about 2 inches apart
onto ungreased cookie sheet. Flatten each cookie with
fingertips. Bake until set, about 8 minutes. Remove to
cooling racks and cool completely.

Peppermint Frosting
2-1/2 cups powdered sugar
1/2 stick (1/4 cup) butter, softened
3 tablespoons milk
1/2 teaspoon peppermint extract

Mix all frosting ingredients until smooth and of spreading
consistency.

Chocolate Drizzle
1/2 stick (1/4 cup) butter, softened
2 tablespoons corn syrup
1-6 oz. package semisweet chocolate chips

Simmer all drizzle ingredients over low heat. Stir
constantly until butter and chocolate are melted.

Spread peppermint frosting over cooled cookies then drizzle
each with chocolate mixture. Leave on counter for 2-3 hours
until frosting is set.

If you serve any of these homemade desserts, you can count
on your guests being very happy. And I will bet that you
will be handing out recipes, just like I do at my house.

Food costs are going up fast. Some foods, such as rice,
are already being rationed at Sam's and Costco. What's
worse, there is no relief in sight as the prices for your
favorite foods are rising at an inflated rate of 4.5% per
year.

That means your eggs have already gone up 30 % in the last
year, and your milk, cheese, flour, bananas and even peanut
butter will be more expensive to buy. All that comes on
top of rising gas prices, which are predicted to double in
the next four years.

In spite of all that bad news, can you still be in control
of how far your food dollars stretch?

Here are 21 simple ways you can start saving money today.

1. Learn the secret food codes

Bread companies have their own codes for when bread is
baked and delivered. Each company is different, but the
general code is alphabetical. Monday-blue, Tuesday- green,
Thursday- red, Friday-white, Saturday- yellow. Learn the
codes, and look toward the back of the shelf to find the
freshest loaves.

2. Do most of your cooking ahead of time

This saves time as well because you are more organized.
Freeze the food and bring it out for individual meals as
your family needs them. You can also give them more
variety and choices. If someone would rather have spaghetti
instead of a casserole, for example, they can warm up an
individual serving. Invest in a deep freeze and freezer
aids which will more than pay for themselves over time.

3. Get out of the grocery store as quickly as possible

Buy only what you need and leave. The longer you stay, the
more you will buy and the store knows that. That's why
your store's layout may not always make sense to you. They
want you to wander around and yield to temptation to buy
more than you need. Always ask yourself if you really need
that gallon of "Death by Chocolate" ice cream just because
it's on sale. Those extra impulse dollars can add up fast.

4. Never shop when you're hungry

Always eat first before you go to the store. The hungrier
you are the more you will spend, and your spending will get
out of control.

5. Always check label dates

You may be surprised at how much difference in food
freshness you will find on one shelf. For example,
prepared salad fixings can vary by several days. Again,
look toward the bottom of the shelf. That's where they
will put the latest deliveries. Get in the habit of
rummaging through. You'll be richly rewarded for the effort.

6. Go for bulk

Join a warehouse club like Sam's Club(Walmart) or Costco.
If you don't want to pay for a membership by yourself, go
in with a friend and shop together.

Buy the stable items only such as canned vegetables,
coffee, rice, spaghetti sauce, mayonnaise. These will be
the items you use most often and they are the foundation of
your pantry. Stay away from the bakery and free food
sample give-aways, although some people have been known to
eat lunch going from counter to counter.

7. Do most of your shopping in one trip

A Sam's or Costco is perfect for a full morning of
shopping. Get it all done at once. This helps you stick
to your inventory and budget because it eliminates
unnecessary trips to the grocery store. Tuesday's are the
absolute best day for shopping if you want to avoid crowds
and get individual attention from the sales staff. (I know
this for a fact because I grew up in retail.) The one trip
shopping days will also help you save on gas, and you can
even fill up your tank at Sam's.

8. Don't buy individually packaged foods

Don't guy grated cheese, or individually packaged cheese
slices. These cost more. Grate your own cheese and stay
away from the cute convenient packaging, especially for
snack foods that appeal to children. Also avoid vending
machines at work. If you want a soft drink, take your own.
You can also buy those in bulk at a warehouse store.

9. Don't buy as many snacks

Fix your own, because this is where food companies really
come in for the kill. Many of today's snacks are full of
salt, sugar, and high fat. They are bad for you anyway,
but cutting down on them may help you cut down on your
medical bills later. Substitute muffins, fruits, and
homemade cookies instead if you have to have snacks.

10.Eat less meat

Needless to say, meat can be very expensive, especially if
you buy meat with big bones. Stick to the lean meats and
watch for the sales. Also you can save by buying frozen
chicken in bulk.

Dried beans or legumes can be substituted for meat and you
can fix tasty recipes using them that your family will love.

11. Learn when your grocery store brings out the best
specials

Every store is different, but they all have the same
problem of how to sell day old bakery items and bread.
Also, ask for ripened produce that will be cheaper. Make
friends of the staff and learn when they first mark
everything down and get to the head of the line.

Even if food inflation seems out of control there are many
ways you can still stop up huge holes in your budget, eat
well, and keep more of your hard-earned money.

A Recipe Collection--Top 5 Most Requested Summer Drinks
When most people host summer parties, they usually have the
basic alcoholic beverages, like beer and wine, but rarely
do you see a host offer a selection of really special
summer drinks.

I have perfected my list of offerings over the years and
now I share my "Top 5 Most Requested Summer Drinks" with
you (in no particular order).

Number One Most Requested Summer Cocktail--Limoncello Mint
Lemonade

1/2 cup lemonade concentrate
1/4 cup fresh mint leaves
1 tbsp. fresh lemon juice
Ice cubes
1/4 cup Limoncello (lemon liqueur)
1/2 cup club soda
Lemon slices and mint for garnish

In a small pitcher, "muddle" mint leaves together with
lemonade concentrate and lemon juice. Muddle means to
bruise the leaves so they release their flavor. I use the
end of a wooden spoon.

Stir in ice cubes, Limoncello and club soda and pour into 4
glasses. Top them off with a lemon slice, a sprig of fresh
mint and an umbrella.

Makes 4-10 oz. drinks.

Number Two Most Requested Summer Cocktail--Pomegranate
Blueberry Martini

Made with 1/2 juice so not as strong as most martinis.

1/2 part vodka
1 part pomegranate mix (I use "Rose" brand)
1 part pomegranate blueberry juice (I use "Tropicana" brand)
Orange slices for garnish

Shake ingredients with ice for 1 minute in a martini
shaker. Pour into some martini glasses and garnish with an
orange slice. Crisp and refreshing!

Number Three Most Requested Summer Cocktail--Pineapple Bleu

2-oz. Hypnotic Liqueur
1-oz. Grey Goose Vodka
Splash of pineapple juice
Lemon twist for garnish

Shake together Hypnotic, vodka and ice until chilled. Pour
into a martini glass, top with pineapple juice and garnish
with a lemon twist and an umbrella.

Number Four Most Requested Summer Cocktail--Sangria Punch

This one is great for summer barbeques because you can
easily make it a pitcher at a time or can serve it from a
punch bowl.

1 lemon
1 lime
1 orange
1-1/2 cups rum (spiced rum works well too)
1/2 cup white sugar
1 (750 milliliter) bottle dry red wine
1 cup orange juice
Chill the fruit, rum, orange juice and wine. If desired,
make ice cubes out of the orange juice. This is a good way
to keep drinks icey cold without diluting them.

Slice the lemon, lime and orange into thin rounds and place
in a large glass pitcher. Pour in the rum and sugar. Chill
in refrigerator for 2 hours to develop the flavors.

When ready to serve, crush the fruit lightly with a wooden
spoon and stir in the wine and orange juice (cubes if you
made them). Adjust sweetness to taste.

Number Five Most Requested Summer Cocktail--Fruited Brandy
Punch

This one has become a favorite at my home and a lot of the
parties I attend, most likely because everyone loves it and
you can make a huge amount and serve it in a punch bowl.

1/2 part brandy (I use Christian Brothers brand)
1 part lemon-lime soda
2 parts fruit juice (Cranberry-Peach blend is my favorite)
1/2 bag frozen fruit (Blueberries and strawberries look
great)
1 fruited ice ring (see recipe below)
Slices of lemons, limes and oranges, if desired

Mix fruit juice and frozen fruit together in a nice punch
bowl or container.

Pour in lemon-lime soda, gently stir and then float an ice
ring on top (see recipe below). Rather than spike the
punch, I serve the brandy on the side so my guests who
prefer non-alcoholic punch can drink it too.

To make ice ring

Pour 1-2 cups of the juice mixture from above into a Bundt
pan or another mold. Add some of the fruit and/or fresh
citrus slices. Freeze overnight.

Just before serving, set the pan into some hot water to
loosen the ice ring and then turn it into the punch bowl.
It makes a really beautiful presentation, cools the punch
and since it's made with juice, it will not water down the
punch. Perfect!

This recipe can easily be altered so you can serve it from
a Drink Fountain which is really gaining popularity lately.
Just leave out the fruit and the ice ring.

So, now you have five classic summer cocktails to WOW your
guests with. They will be so surprised when you hand them
one of these special summer drinks instead of the usual
beer and wine.

A Recipe Collection--Top 3 Most Requested Hot Appetizers
When I host parties, I always have at least 2 or 3 hot
appetizers for my guests to choose from. I am not a
"throw-a-can-of-peanuts-on-the-table" kind of gal!

It's important to me that I take the time to select
satisfying party appetizers that:

Are simple to make
Have few ingredients
Hold up well over time
Are pleasing to look at and of course,
Taste great!

Over the years, I have tried out a lot of easy party
appetizers on my friends and family and hands down, the
three below are my "Top 3 Most Requested Hot Appetizers"
(in no particular order).

Number One Most Requested Hot Appetizer--Warm Chipotle
Cheddar Dip

2 cups shredded Cheddar cheese
1 cup shredded Monterey Jack or Mozzarella cheese
1/2 cup mayonnaise
1-8 oz. can whole kernel corn, drained (3/4 cup)
1-4 oz. can chopped green chili peppers, drained
2 teaspoons finely chopped canned chipotle chili peppers in
adobo sauce (or to taste)
1/4 teaspoon garlic powder
1 medium tomato, seeded and chopped (3/4 cup)
1/4 cup sliced green onion
2 tablespoons snipped fresh cilantro
Vegetables, crackers or chips

I found this dip when I was on a low carb diet and was
looking for a party appetizer that would work well with
vegetables. Something with a robust flavor that would perk
up the veggies.

Well this one definitely fit the bill. This appetizer has
become a favorite among my friends. It's served multiple
times throughout the year at various parties that I either
host or attend.

You can make it as smokey and spicy as you want by
adjusting the amount of chipotle peppers (smoked jalepenos)
but watch out. You can easily go from mildly spicy to
blow-your-face-off hot by adding too much!

Steps to Make Cheddar Chipotle Dip

Preheat oven to 350 degrees.

Stir together cheeses, mayonnaise, corn, green chili
peppers, chipotle chili peppers and garlic powder in a
large mixing bowl. Spread mixture into a 1 quart, covered
dish.

Bake for 30 minutes until bubbly. Top with tomato, green
onion and cilantro. I like to make a pattern out of the
toppings so I put the tomatoes all in the middle, make a
ring around them with the green onion then sprinkle the
cilantro over all.

Serve with vegetables, like red, green and yellow peppers.
Tostido and Frito Scoops work well too.

Number Two Most Requested Hot Appetizer--Boneless Buffalo
Wings

1 large bag of popcorn chicken, thawed (I buy mine at Sam's
Club)
1 package dry Good Seasons Italian dressing mix
1 bottle Frank's Red Hot Sauce (or to taste)
1 stick margarine (butter will separate)
2 teaspoons lemon juice
Pinch dried basil

In a saucepan, combine dressing mix, hot sauce, margarine,
lemon juice and basil and cook until margarine melts,
stirring constantly.

Place chicken in a large bowl and pour sauce over it. Stir
until well combined, then pour all into a Crock Pot. Cook
on low 4 hours. Crack the lid to keep down the steam and
prevent wings from getting soggy.

Serve with celery sticks and blue cheese dressing (do not
use the reduced fat variety).

Number Three Most Requested Hot Appetizer--Warm Green Chili
Dip

8 oz. shredded mozzarella cheese
8 oz. shredded mild cheddar cheese
2 cups mayonnaise
1 small sweet onion, minced
1 can (4 oz.) chopped green chilis, drained
1-1/2 oz. chopped pepperoni
1/2 cup sliced ripe olives
Assorted veggies (baby carrots and peppers are great!)
Tostidos or Fritos Scoops

In a shallow baking dish, combine the first five
ingredients. Top mixture with the pepperoni and olives.

Bake at 325 degrees about 25 minutes or until bubbly. Serve
with Scoops, crackers or assorted fresh vegetables.

Note: I do not recommend using reduced fat mayonnaise.


Speaking from personal experience, these three hot
appetizers are guaranteed to be a hit at any get together.

WARNING: Get ready to hand out the recipes!
